There are 2 methods of
calculating fat percentage.
- Gurber method
- Milkotestominer method.
GURBER METHOD
APPARATUS:
Butyrometer and centrifuge machine.
CHEMICAL
AGENTS:
H2SO4
and amyl alcohol.
PROCEDURE:
Take
10 ml H2SO4,
11 ml milk sample and 1 ml amyl alcohol in Buterometer. Then tight a
cork on it. Then stir it gently. When it will become a solution, put
it in centrifuge machine for 5 mints. At least 2 Buterometers should
be put in centrifuge at a time on alternate position for maintaining
a balance. Take it out after 5 mints. See the fat that blows up. Take
reading, digits directly reflect the fat %age.
