APPARATUS:
Milk sample, small
beaker, burette, pipette and stirrer.
CHEMICAL AGENTS:
N/10 NaOH and
Phenolphthalein indicator.
PROCEDURE:
Take 10 ml milk in a beaker. Add
2-4 drops of phenolphthalein indicator in milk. Add NaOH drop wise in
it and stir it. Continue adding NaOH till pink color
appears. Note the final reading of
NaOH.
CALCULATION:
Initial
reading of NaOH = 20.1 ml
Final
reading of NaOH = 22 ml
Volume of
alkali used = 22-20.1 = 1.9 ml
Acidity =
volume of alkali used x 0.009 x 100
Milk sample
= 1.9 x 0.009 x 100

= 0.171
Acidity
must be less than 1 otherwise it indicates that milk is spoiled.
